My mouth is already watering just thinking about these cheesy beef enchiladas! This is the perfect recipe for a weeknight dinner or for when you have some friends over. I like to serve it with some Spanish rice and beans to complete the meal.
Cheesy Beef Enchiladas
Ingredients:
- 1 pound ground beef
- 1/2 cup diced onion
- 1 can (10 ounces) enchilada sauce, divided
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 8 flour tortillas (8 inches), warmed
- 2 cups shredded cheddar cheese
Instructions:
- Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in 1/2 cup enchilada sauce, cumin, garlic powder and salt.
- Spoon about 1/4 cup beef mixture off center on each tortilla; top with 2 tablespoons cheese. Roll up and place seam side down in a greased 13×9-in. baking dish. Top with remaining enchilada sauce; sprinkle with remaining cheese.
- Bake, uncovered, 20-25 minutes or until heated through and cheese is melted. Let stand 5 minutes before serving.
